YIELD: 6 CINNAMON ROLLS
YOU WILL NEED:
- 9″ x 9″ sheet pan
- Pan spray
- Pastry brush
- Small whisk or fork
- Small bowl
- One egg
PREPARATION
The evening before, or about 8 hours prior to baking:
Remove frozen cinnamon rolls from packaging. Lightly coat a 9″ x 9″ glass baking dish with pan spray. Place all 6 cinnamon rolls in the dish.
Cover gently with plastic wrap and place on the counter to thaw and proof overnight at room temperature (68°-72° F). These should be proofed for 8 hours. Exact time will vary depending on your home’s temperature: cooler temps may cause the proofing to take longer, while warmer temps will make it go faster.
Your cinnamon rolls should be nearly tripled in size.
Baking, Day of:
Preheat the oven to 350°F with no fan or convection. Adjust your oven racks to have one rack in the middle of your oven.
Make an egg wash: In a small bowl, combine 1 egg and 2 tablespoons of water. Whisk until mixed well.
When the oven is ready, apply the egg wash. Using a pastry brush, lightly brush the egg wash over the cinnamon rolls.
Place the baking sheet in the middle of the oven rack and bake for 20-25 minutes, rotating the pan halfway through. The cinnamon rolls will appear golden brown when finished.
Remove from the oven and let cool slightly before serving.

1/2 cup granulated sugar (98 grams)
1 tablespoon vanilla extract
3 tablespoons + 1 teaspoon heavy cream (50 grams)
Directions
With a hand mixer or a KitchenAid fitted with a paddle attachment, mix the cream cheese, butter, sugar, and vanilla extract until smooth and pale, about 4 minutes.
Once smooth and airy, slowly add the cream while mixing until combined. Reserve until cinnamon rolls have cooled.
When rolls have cooled, spread generously across the cinnamon rolls.
